Emulsifier derived from vegetable fats used to emulsify fats and water molecules. Used at a very low dosage rate 5-10g per litre silk gel will add stability and structure to ice creams, sauces and baked goods. Its powerful emulsifying properties will enable the production of foams from oils

Silk gel can be easily dispersed into a warm liquid base.

To add to a cold base, the gel should first be mixed with a drop of hot water.
