Pure ascorbic acid (vitamin c) is used to prevent the oxidisation of fruits and vegetables. Used at a low dosage rate 1 - 5 % ascorbic acid will lower the ph of a water solution. Used when preparing artichokes, potatoes or cut fruits to retain the natural colour without altering the flavour profile. Ascorbic acid is also used as a bread improver to help increase the volume and provide a more stable dough.
