About MSK

Helping chefs from vision to plate

As a chef-led business, we believe in great ingredients, in creativity, and in excellent flavour, texture and presentation. We do everything we can to help chefs deliver their culinary visions to the pass consistently and reliably.

Our ingredients and tools are found in the best kitchens in the country, and our development chefs Vicky and Rupert are in constant demand for staff training and demonstrations. That’s because they understand the challenges of the professional kitchen, having each had substantial careers in the industry:

VICKY ENDERSEN

Vicky worked at the Michelin-starred Roscoff restaurant in Belfast, before joining John Burton Race on the team that won 2 stars at L’Ortolan and again at The Landmark. She returned to L’Ortolan as Head Pastry Chef under Alan Murchison and then Restaurant Tom Aikens before joining MSK in 2006. This was an exciting time with a surge in interest in ‘Molecular’ cuisine, and Vicky was instrumental in MSK taking a lead in the use of these modern ingredients, translating the science into practical and easy-to-use recipes, and sourcing innovative new products from around the world, often testing hundreds of alternatives to pick the one version which delivers the best real-world performance for a chef.

RUPERT ROWLEY

Rupert was a key member of the formative teams at Le Manoir au Quat’ Saisons, L’Ortolan and Restaurant Gordon Ramsay before becoming Executive Head Chef of Fischer’s at Baslow Hall, where he maintained a Michelin Star for 17 years as well as owning his own restaurant and bar, Rowley’s. Rupert joined MSK in 2018 and is particularly passionate about training chefs. Rupert has judged for the Craft Guild of Chefs, Skills for Chefs and the Universal Cookery and Food Festival. He is a member of the Master Chefs of Great Britain and has appeared on Great British Menu, The Hairy Bikers and Yes Chef. At MSK, Rupert set up and runs the MSK Academy programme where he supports staff and students in a growing number of colleges around the country with his expertise.
