A great ice cream starts with a reliable base.
These two recipes demonstrate different approaches to creating a versatile ice cream foundation using MSK Ice Cream Stabiliser. The first is a traditional custard-style base made with egg yolks, while the second is an egg-free alternative with a lighter texture.
Both recipes can be adapted with different flavours and ingredients, making them useful starting points for developing your own ice cream recipes.

Traditional Custard-Based Vanilla Ice Cream Recipe
A great base for traditional custard ice cream, adaptable to a multitude of flavours.
Ingredients
- 500g milk
- 500g double cream
- 1 vanilla pod (split)
- 8 egg yolks
- 150g sugar
- 50g Ice Cream Stabiliser
Method
In a pan, bring the milk, cream and vanilla to the boil.
Separately, whisk together the yolks, sugar and ice cream stabiliser.
Add the stabiliser mixture to the milk mixture and cook until it thickens (at around 80°C). This works really well in a Thermomix.
Remove from the heat and cover, allowing to cool.
Pour into a canister and freeze until solid.
Process in the frozen dessert processing system and serve.
Neutral Base Ice Cream Recipe (No Eggs)
An Ice cream with a lighter texture than a custard base, adaptable for a multitude of flavours.
Ingredients
- 250g double cream
- 750g milk
- 150g Ice Cream Stabiliser
- 150g sugar
- Flavouring Compound or desired flavouring
Method
In a bowl, stick-blend together the cream, milk, stabiliser and sugar.
Add the desired flavouring; if using MSK Flavouring Compounds, add at a ratio of 50g per litre, then blend again to combine.
Pour into a canister and freeze until solid.
Process in the frozen dessert processing system and serve.

Notes
Both of these recipes are best for high-performance frozen-dessert processing systems but can be made in traditional churning machines.
