
Vanilla. A word that might be synonymous with simplicity, familiarity, even the ordinary. But vanilla is in fact one of the world’s most prized ingredients, revered by chefs, perfumers and artisans alike, and the vanilla we have here at MSK is truly anything but ordinary. Hand selected by our chefs from exceptional growers across the world, it represents the highest standard of quality, depth of flavour, and aromas so rich and complex, they transport you immediately.
Vanilla was one of the first ingredients we stocked at MSK, yet it still remains without its story being told. So here goes…
The origin of vanilla lies in the Vanilla Planifolia orchid. A delicate pale yellow flower that blooms for just one fleeting day. In that short window everything must align for the flower to become a vanilla pod. Native to southern Mexico, this orchid was once pollinated by a tiny stingless bee, a species that exists only in that region.
For centuries, this meant vanilla could only be found where this elusive bee lived. When European explorers returned from the New World with the vanilla plant, they brought back the beauty of the flower but no flavour. Without its native pollinator, the orchid remained just that, a fruitless flowering plant with a secret that was steeped in history.

It would take over 300 years and the brilliant spark of a 12 year old boy on Réunion Island to unlock the mystery.
With an intuition and an observation that had never been used before, Edmond Albius discovered a way to hand-pollinate the vanilla orchid using a thin sliver of bamboo. At sunrise, when the flower opens, he would lift itdelicate membrane and bring together its pistil and stamen. That single act became the gold standard for vanilla cultivation across the globe. His technique is still used today and has changed the course of vanilla forever.
But even after pollination, vanilla’s story is still just beginning. From the sunrise union of the pistil and the stamen, it takes eight months for a vanilla pod to mature. Once harvested, the pods are blanched, sun dried, wrapped in cloth at night, and cured for weeks. Their bright green hue fades into a rich brown. This process adds depth to the flavours and aromas, allowing the vanillin crystals (responsible for vanilla’s unmistakable scent) to slowly rise to the surface.

Only the finest pods, usually equalling less than 15% of the crop, are selected by hand for further aging. From flower to the finished beans that you see available from MSK, the journey takes up to 15 months.
Vanilla is not just a flavouring it’s a craft: a labour of patience, precision, and heritage. Each bean is a story, of a fleeting flower, a forgotten genius, and a process that blends science, art and nature in equal measure.
