A rich and silky emulsion of rendered chicken fat, deeply reduced chicken stock and Piedmont hazelnut praline. This savoury butter carries elegant depth and flavour which is perfect for adding a hint of warmth to any dish. Works well when paired with our Spiced Chicken Fat Bun.

Whipped Chicken and Hazelnut Butter
  • 650g Chicken Fat
  • 120g Reduced Brown Chicken Stock
  • 100g Piedmont Hazelnut Paste 100% MSK-7851
  • 12g Roast Garlic Intense Flavour Powder MSK-2560
  • 5g Kosher Salt
  • 14g Silk Gel MSK-0494

1. Reduce the Chicken Stock to the desired flavour.

2. Add Hazelnut Praline and Chicken Fat.

3. Add Salt and Silk Gel.

4. Hand blend to emulsify. 

5. Put into Pacojet container and freeze.

6. Paco when needed.
