MSK UltraLin has a similar texture and functionality to sugar, which makes it a perfect option for creating savoury versions of sweet dishes.
In this case we've created a savoury cannelloni tube using red peppers. You can use this technique to create tuiles from a wide variety of vegetables.
- 400g Red pepper puree
- 100g MSK UltraLin
Using a stick blender, blend the puree and UltraLin together until completely homogenous. Spread the mixture thinly on to a non-stick silicone mat. Dehydrate the mixture in a low oven or dehydrator until completely dry. Cut and shape the tubes while the mixture is hot.
Store the tubes in an airtight container until ready to serve.
