What is a Cordial?

Cordials are one of the most useful building blocks behind the bar. At their simplest, they are sweetened and acid-balanced syrups designed to carry flavour. Unlike a standard sugar syrup, a cordial combines sweetness, acidity and aromatics into a single ingredient, allowing bartenders to build complexity, consistency and balance into drinks with minimal effort.
From classic lime cordials and elderflower cordials to more contemporary fruit, tea and botanical creations, cordials can be used to introduce flavour, provide sweetness, contribute acidity, or achieve all three simultaneously. They are equally valuable in cocktails, low-alcohol serves and non-alcoholic drinks.
Building a Balanced Cordial
While flavour is often the focus, balance is what makes a cordial successful. Sugar provides body and sweetness, while acids bring brightness, freshness and structure.
In this recipe, we combine citric and malic acid rather than relying on citric acid alone. Citric acid delivers the sharp, clean acidity associated with citrus fruits, while malic acid contributes a softer, longer-lasting tartness found naturally in apples and many orchard fruits. Together they create a fuller, more natural acidity that helps flavours feel vibrant and well-defined.
This base cordial provides a versatile foundation that can be adapted with fresh juice, fruit purée, infusions or extracts to build a wide range of bar cordials.
