
MSK Banana-Cocoa Old Fashioned Cocktail
- 2oz MSK British Bourbon Liqueur
- 1oz MSK Banana Gomme Syrup
- 2 Dashes of Chocolate Bitters – we use Bob’s Bitters
Mix all the ingredients together and stir with ice.
Pour over ice in a glass, then serve and enjoy!
MSK British Bourbon Liqueur
- 350g Bourbon
- 20g MSK Roasted Cocoa Nibs
- 100g Banana Skins
- 80g MSK Cocoa Butter
Mix all the ingredients together and place in a vacuum bag.
Bathe in an Ultra Sonic Machine for 2 hours
Freeze over night.
Pass the mixture through a coffee filter.
Bottle to preserve.
MSK Banana Gomme Syrup
- 180g Banana Juice
- 20g MSK Gum Arabic
- 200g MSK Cocoa Juice Reduction
In a bowl, combine 80g of the banana juice with the gum arabic.
Stir well and allow it to stand until the powder has dissolved. This will take an hour or so.
When ready, the gum arabic will have soaked up the water and will have become a sticky paste. Stir again until it becomes smooth, then put to one side.
In a pan put the cocoa juice reduction with 100g banana juice - heat slowly to boil.
Lower the heat to a simmer and then add the Gum Arabic Paste - simmer for about 5 minutes, stirring continually, until a thick syrup forms.
Use a spoon to remove any foam buildup on the surface.
Pass through a Claribag and allow the mixture to cool.
Place in a bottle and keep in the fridge
