We've finally got a little bit of summer in the UK, so here's an idea for some extra special burgers we've made. We've branded the buns using a custom branding iron from 100% Chef that we've had made for us. These branding irons can be made in a range of different shapes and sizes to suit your logo, and you can use them to brand food like meat or fish skins, bread, or wooden serving tools and ice cream sticks etc.
For these burgers we've made our own burger cheese, using a local beer and the world famous Henderson's Relish, made just down the road in Sheffield. We've also used a special burger relish we've made using the Ocoo, so check back soon for details of how we've made that!
Burger Cheese with Beer and Hendersons
- 130g Beer
- 100g Water
- 5ml Henderson's Relish
- 2g MSK Flavour Enhancer
- 2g Salt
- 14g Sodium Citrate
- 6g Iota Carrageenan
- 2g Kappa Carrageenan
- 200g Swiss Cheese
- 180g Mature Cheddar
Put the water, beer and relish in a pan.
Mix all the dry ingredients.
Add to the liquids and bring to the boil whilst stirring.
Gradually stir in the cheese. Keep stirring until all the cheese has melted and it is completely smooth.
Pour onto a tray and spread out.
Press between 2 trays and refrigerate.
