A 99 is a British classic - but there's no reason it can’t be elevated.
In this recipe, we've made each element from scratch, from vanilla soft serve made with fresh vanilla pods to a homemade Speculoos waffle cone, strawberry and rose sauce and a chocolate flake made with Luker Chocolate. The result is a familiar favourite with a little more flavour, texture and attention to detail.

Vanilla Soft Serve Recipe
A simple home-made vanilla soft serve, a great alternative to a premix.
Ingredients
- 1500g milk
- 250g double cream
- 240g sugar
- 240g Ice Cream Stabiliser
- 3 vanilla pods (split) or vanilla flavouring
Method
In a bowl, stick blend all the ingredients together.
Cover and leave in the fridge for 12 hours to fully hydrate.
Pass through a sieve to remove any vanilla.
Pour into soft serve machine as per machine instructions and serve.
Speculoos Waffle Cone Recipe
A crisp, buttery homemade waffle cone with warm Speculoos spice and a delicate sweetness.
Ingredients
- 120g egg white
- 120g double cream
- 200g sugar
- 160g flour
- 2g salt
- 3g Speculoos Biscuit Spice
- 140g butter (melted)
Method
In a bowl, whisk together the egg white, cream and sugar.
Separately combine the flour, salt and speculoos spice.
Add the melted butter to the egg white mix and whisk.
Add in the flour mixture and whisk again until combined.
Chill in the fridge for approximately 3 hours until firm.
Bake in the slimmer at 170°C, top and bottom heat, for approximately 5 minutes.
Strawberry & Rose Sauce Recipe
A bright, fruity strawberry and rose sauce with a delicate floral note and balanced acidity.
Ingredients
- 100g Wild Strawberry Flavouring Compound
- 20g English Rose Flavouring Compound
- 10g Strawberry Flavour Burst
- 100g stock syrup (equal sugar and water)
- Big pinch Malic Acid
Method
In a bowl, add the compounds, flavour burst and stock syrup and mix to combine.
Sprinkle in the malic acid and mix again. This can be adjusted to taste.
Pass through a sieve and bottle until ready to use.
