MSK UltraTex

MSK UltraTex is a high-performance, instant-thickening starch specifically developed for its effectiveness and ease-of-use use in a professional kitchen environment.  An extremely versatile product, it can be applied to both hot and cold liquid preparations until they reach the desired thickness.  It is tasteless, colourless and gluten free, and much easier to use and more efficient than alternatives.

Key Information - MSK UltraTex

Features:

  • Gluten free, plant based and allergen free
  • No heat required to thicken
  • Freeze/thaw stable
  • Colourless and tasteless
  • Shiny glossy finish
  • Easily dispersed and dissolves without lumps
  • Won't bleed or leach on the plate

Primary uses:

    • Thicken thin juices to make sauces
    • Thicken stocks without over reduction, to desired viscosity
      • Make wafer thin tuiles form liquids
      • Make perfect fluid gels     
      • Works in both sweet and savoury applications  

      Alternatives to:

      • Arrowroot
      • Cornflour
      • Agar agar
      • Xanthan Gum

      Essential information:

      • Always use a whisk to disperse the UltraTex
      • Don’t use a stick blender or thermomix. The shear force from the machines is too strong and will break down the starch.
      • There is no dosage rate: Use as required to obtain the desired thickness.
      • Allow the mixture to stand for a couple of minutes and check the viscosity before adding more
      • In applications where there is little free water (e.g. alcohols and oil-based sauces), hydrate the UltraTex in water to form a paste and then add.
