Premium vanilla pods should be dark-skinned, plump and moist, with a rich aroma. They will often develop a white dusting of natural vanillin crystals which is a sign of high vanillin content. With so much disruption in the vanilla marketplace in recent years the market has been flooded with poorer-quality 'red' extract-quality or 'green' (unripe) beans harvested in haste, but we always secure the highest quality, richest aroma, grade A 'black' beans: soft and moist with the highest yield of seeds and oil.
