Xanthan Gum

A highly versatile ingredient which can be used:

  • to thicken sauces, juices and stocks without masking flavour,
  • as a foaming agent to create denser foams with a glossy finish
  • to suspend caviar pearls within a liquid
  • to stabilise foams when using a whipper gun
  • to prevent ice crystals in freeze/thaw mousse and parfait mixes.

It can also be mixed with Agar Agar, Kappa Carrageenan or Methocel to strengthen brittle gels or prevent leaching.
