Our training days have proved so popular that we are now building a portfolio of exciting masterclasses delivered in conjunction with the many experts we have met on our development journey.
Yesterday we were delighted to host renowned baker and chef Richard Bertinet of the Bertinet Bakery & Kitchen who delivered a truly inspiring and educational masterclass covering bread and pastry for us in the specialist facilities demonstration theatre kitchen at the Sheffield City College. A sell-out with over 60 of you booked on, we were also able to open the demonstration theatre viewing gallery to allow baking and patisserie students from the Sheffield College to join us.
Richard began the masterclass by talking about his love of baking and the importance of good bread: he spoke passionately about the history of bread; attributes of a good ‘French’ baker, specifically the expressive Gallic ‘shrug’; good quality ingredients and tools of the trade. Richard went on to demonstrate how to make dough and the particular methodology that he uses to create his doughs; ably assisted by Shak from Purnell’s who, on offering to assist, discovered that talking to his dough in French vastly improved its acquiescence! Richard then shared his expert dough shaping skills cutting fougasse and shaping the classic French style baguette.
Richard followed the baking masterclass in the afternoon with a pastry session and shared practical tips and advice on making both sweet and savoury pastry; demonstrating French classics - French apple tart, tarte Bordaloue and finally a savoury, hand formed tartiflette.
Richard’s obvious passion for his subject alongside his extensive knowledge and delivery skills resulted in a fabulous and informative day for the chefs who attended, a wide and diverse group from as far afield as Birmingham, Manchester and York as well as locally based chefs from Fischer’s at Baslow Hall and the Coghlans cookery school.
