  • Makes icings more pliable therefore ideally suited for decorative cake work.
  • Can also be used as a thickener, emulsifier and suspending agent.

 

Applications:  Gels only in the presence of Xanthan Gum.  Ice cream stabiliser.  Low Ph sauces.

Rate of hydration:  Requires heating to 85ºC
